Roasted Herbed Nuts
You can use any nut you choose but start with raw nuts. For this recipe I used almonds. There’s so much versatility with the seasonings you can use so feel free to mix it up!
Ingredients
2 cups raw almonds (or other nuts such as cashews, pecans, hazelnuts and pistachios)
3 tablespoons olive oil or enough to make sure the nuts are covered in oil
2 tablespoons fresh rosemary, minced
Pinch of cayenne
salt and pepper
Directions
Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. In a bowl, toss the nuts with the other ingredients and spread out evenly on the baking sheet in a single layer. Roast for 25 minutes, tossing every 5 minutes so the nuts are evenly roasted. If the nuts start to get too dark, take them out of the oven. You want them to darken but not burn.
Remove from the oven and let cool completely. Taste one before completely cool and add more salt if needed. They will taste soft at first but will crisp up once cooled.
Other mix in ideas: fresh thyme, smoked paprika, brown sugar to balance the salt, garlic salt
